If you’ve ever wondered whether birthday dinners hit different at a resort — I’m here to confirm that yes, yes they do. For my birthday this year, we celebrated at the Hyatt Regency Coconut Point Resort and Spa in Estero, and I’m still thinking about the snapper, the wine, and the glowing lights that made it feel like we were somewhere far more exotic than just a few miles from home.

Pre-Dinner Drinks with a Fountain View
We started the night with drinks on the patio just outside the resort’s Tarpon Bay restaurant. The six of us grabbed a little table near the fountains — you could hear the water trickling in the background and the vibe was very relaxing.
I ordered what was essentially an espresso martini, but at the Hyatt, they’re classed up with a fancy name I now can’t remember (and should’ve written down — blogger fail). Regardless, it was strong, cold, and gone in about two sips.
Dinner at Tarpon Bay: Snapper, Scallops & Cakebread
Once we were seated for dinner at Tarpon Bay, things got real delicious, real fast. The restaurant itself is airy and coastal with whitewashed wood and a hint of upscale island vibes. I later learned it’s been part of the Hyatt for years and is consistently listed as one of the best seafood restaurants in the Estero/Naples area.
Now to the food: 5 out of the 6 of us ordered the Diablo Snapper — a spicy, flavorful dish served with creamy coconut rice. It had the perfect balance of heat and sweetness. The one rebel in our group went with the scallops, which came beautifully plated and equally raved about.
We sipped Cakebread Cellars Chardonnay, which felt like the right thing to do — it’s smooth, slightly oaky, and just special enough for a birthday toast (or three).
Ending the Night with Champagne & Waterfalls
After dinner, we walked the resort grounds, champagne glasses in hand. The Hyatt Coconut Point truly comes alive at night — fire pits glowed, waterfalls shimmered, and string lights twinkled across the walkways. Even if you’re not staying there, it’s 100% worth visiting for a drink or dinner. The whole property feels like a tucked-away luxury escape — without having to pack a bag.
It left me wondering: why aren’t we checking out more resort restaurants in the area? You don’t have to be on vacation to feel like you’re on one.
